The holidays is the busiest times for all of us, and sometimes it can become extremely hectic trying to cook a decent meal, and stay on the healthy track. And since I’m trying to do right everyday, I want to keep it up for the holidays, and still eat good. So here’s some meals that I will be doing this year that I love eating, and I think are amazing for the holidays. So here are 3 of my favorite slow cooker recipes:
Easy Crockpot Chili Soup.
This is my favorite when it gets cold outside and I even love eating it on off season as well. It’s amazing, especially when cooked right. Here’s the ingredients:
- 1 lb ground beef
- 1 cans dark pinto beans
- 1 can pinto beans
- 1 can tomato sauce
- 1 can tomatoes
- 1 packet of chili seasoning
- 2 cups of water
Brown your ground beef, drain the grease and place it in the crockpot. Add in the kidney and pinto beans, tomato sauce, tomatoes, chili seasoning and water. Stir until all ingredients are combined. Cook on low for 6-7 hours, or high for 4 hours. After finished, serve with cheese on top, and your choice of toppings.
This is my “I’m being lazy meal”, and prefer to let the crockpot cook my meal but it makes it worth it. I would normally use the chicken to make tacos or a rice bowl, and it is delicious in the end, and it’s simple and affordable ingredients. Here’s the ingredients:
- 3 large boneless chicken breast
- 1 can of corn
- 1 can rotel tomatoes
- 3/4 salsa
- 1 lime
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- various toppings: sour cream, chips, cilantro, avocado, tomatoes, and more!
Clean and wash chicken. Place in chicken, corn, beans, and tomatoes in crock pot. In a large bowl combine salsa, lime juice, and seasonings. (I typically season my chicken a little before placing in the crockpot but it’s your preference). Stir everything together evenly, and pour over chicken. Cook on high for 3-4 hours or low 6-8 hours. Remove, and shred chicken (I would shred mine in the crockpot), and serve with your meal for that night.
3 Ingredient Buffalo Ranch Crockpot Drumsticks.
This when I’m feeling something hot like hot wings, and don’t know where to go get any from. So I make my own at home, and either eat it with something healthy or some fries. Here’s the ingredients:
- 10 thawed chicken drumsticks (I like the small ones)
- 1 packet of ranch seasoning
- 1 buffalo wing sauce (bottle)
Wash and clean drumsticks, and place them in the crockpot, cover, and cook on high for 3 hours. After the 3 hours, remove the juice from the crockpot. In a bowl, mix together 1 full bottle of wing sauce and 1 packet of ranch seasoning. Pour the mixture over the chicken, and cook for additional 30 minutes to an hour.
